Fluffy Pancakes

Ingredients

  • 1 cup all purpose flour

  • 2 tsp baking powder

  • pinch of salt

  • 2 tbsp white sugar

  • 3/4 cup plus 2 tbsp milk

  • 1 large egg, beaten

  • 2 tbsp unsalted butter, melted

  • 1 tsp pure vanilla extract

  • canola oil for cooking

    Directions

    1. Mix flour, sugar, salt, and baking powder

    2. In separate bowl, mix egg, milk, vanilla extract, and the melted butter together.

    3. Make a well in dry ingredients, and pour wet ingredients and stir until mostly mixed. Make sure the batter is still a little lumpy and thick.

    4. Let batter sit for 5-10 minutes.

    5. Use a measured spoon so each pancake is the same size. Cook until the top surface either bubbles a little, or the cooked side is a nice golden color. Flip and repeat.
